Pumpkin Spice Oatmeal Recipe
Pumpkin comes back in a really big way everyFall. Each year I look forward to those infamous
lattes, pumpkin bread, pumpkin pies...but I thought, why limit myself to just those
items when I could have a warm and heartyPumpkin Spice Oatmeal. It's like having a
healthy pumpkin pie for breakfast!You're going to need 1 1/4 cup of milk, 1/2
cup of pumpkin puree, 1/2 cup of rolled oats,1/2 tablespoon of brown sugar, 1/4 teaspoon
of cinnamon, and 1/8 teaspoon of ground nutmeg,ground cloves, ground ginger, a dash of salt,
and a tablespoon of pecan pieces.First take a medium-sized saucepan, combine
your milk, pumpkin puree, spices, and salt,and stir it up well. Put it on the stove on
medium-low heat and heat it up for about fiveminutes until it's hot but not bubbling. Then
add in your rolled oats and continue heatingit up for another five minutes. Remember that
rolled oats take a longer time to cook thanquick oats. You can substitute quick oats
in here but it'll go a lot faster.Turn up the heat and let it bubble for about
two minutes. Depending on how you like youroatmeal, if you like it thicker let it sit
for a few more minutes, but if you like itrunny just give it a stir and take it off
the heat.Serve it in a bowl and top it with some pecan
pieces and brown sugar or even a drizzle ofmaple syrup!
